How grown-up Las Vegas works
Las Vegas splits into a few zones that behave very differently at night. The Center Strip (Bellagio, Cosmopolitan, Aria, Paris, Caesars) is the polished heart: fountain views, supper clubs, Cirque shows and elegant lounges. The North Strip around Wynn and the Venetian is plusher and a little calmer, with Delilah and the dueling pianos at Juliet. Downtown around Fremont Street is older, cheaper and full of character: the adults-only Circa, steakhouses under glass domes, a 16-seat speakeasy and the Neon Museum. Off-Strip west has the locals' tiki bars, Chinatown and a nightly blues bar.
The trick for a mature crowd is timing. Rooftops and lounges are at their best from sunset until about 11 p.m.; after midnight the energy shifts younger. Big shows usually start around 7 or 9:30 p.m. Book the headline dinner and the headline show first, then fill in lounges and walk-ins around them.

The Mayfair Supper Club
Bellagio, Center Strip
A theatrical supper club facing the Bellagio fountains, with a 360-degree stage that rises and lowers during dinner. Performers move through the room as the courses arrive, so it is dinner and a show in one seat.
Tip: Book a table for the later seating on a Friday or Saturday if you want the room at full swing.

Petrossian Bar
Bellagio lobby, Center Strip
The Bellagio lobby bar under Dale Chihuly's glass ceiling, with pianists on a Steinway grand, caviar on the menu and afternoon tea earlier in the day. One of the few places on the Strip where you can actually talk.
Delilah
Wynn Las Vegas
Wynn's modern supper club: an old-Hollywood room with a live band and singers through dinner. It is a see-and-be-seen evening with a strict no-photo policy.
Tip: Reservations are hard; book far ahead or ask the Wynn concierge.
Dress: Upscale: collared shirts; no athletic wear, shorts or flip-flops
Juliet Cocktail Room
The Venetian
The dark, Victorian-styled lounge that replaced The Dorsey, with dueling baby grand pianos playing requests across the decades. DJs take over later in the night.
Tip: Go in the early evening for the pianos; stay later only if you want a DJ.
Legacy Club
Circa, 60th floor
Downtown's rooftop lounge on the 60th floor of the adults-only Circa, with indoor and outdoor seating, a strong cocktail list and live music or DJs. The best sunset view downtown.
Tip: Tables need reservations; the bar is first come, first served.
Dress: Upscale nightlife attire; no athleisure or swimwear
The Laundry Room
Inside Commonwealth, Fremont East
A 16-seat speakeasy hidden inside Commonwealth. House rules: speak quietly, no photos, no standing at the bar. Ideal for a couple who wants real conversation and superb drinks.
Tip: Reservations open two weeks ahead and go quickly.
